Day 2 - Revelations

Throwing dinner together unexpectedly isn't as easy as it used to be. We were supposed to have grilled rib eyes, herbed potatoes and asparagus for dinner. Well, Mother Nature put the kibosh on that by raining on my parade. Dinner on the fly used to be one of my many easy pasta dishes, sometimes as simple as garlic, olive oil and herbs. Until I get some GF pasta that tastes acceptable to both of us, life is going to be a bit more complicated. I'm also amazed at the fact that some canned tomatoes and beans have traces of wheat in them. Life is going to take a whole lot more thought and preparation from now on.
I shredded what was left of a chicken that The Man smoked the other day, added some of the quinoa black bean salad, chicken stock that I made, a handful of fresh herbs, a little baby spinach and some potato flakes to give it body, and voila! A pretty passable soup that both of us will eat. I don't know how people with little to no culinary knowledge survive in the real world.

I had a similar issue at lunch today. Nothing on the hot bar was wheat free. Nothing. Not a single thing, except for the brown rice and salad, and the rice is always over cooked and under seasoned. What's a hungry girl with four more hours to her shift to do?

Enjoy Life's Plentils and Garden Fresh Naturals garlic and chive hummus. Both certified gluten free, and both really yummy. Plentils is a lentil chip with a texture similar to a pork rind. Light and crisp, it's got a very satisfying crunch. The hummus isn't too smooth, but isn't too chunky, and the garlic flavor is just right. The combo gives me what I like, texture contrast, and it's nutritious to boot. At least I'm assured that I have something I can always fall back on at work.
Each day is a lesson, and I'm excited about the journey.
